Creole Fish Soup

This is a recipe Aaron made up, and I wrote down what he did.
Ingredients
  • 1 Tbsp olive oil 
  • 1 lb fish (we used pink salmon)
  • 2 quarts tomatoes
  • 1 jar marinated artichoke hearts
  • 1/2 large onion chopped
  • 1 Tbsp creole seasoning
  • 1 tsp basil
  • 1/2 tsp oregano
  • 6 oz small shell pasta
Directions
  1. Heat oil in a large skillet.  Cook fish until done about 10 minutes, set aside.
  2. In a large sauce pan combine tomatoes, artichoke hearts and onions.  Season with creole seasoning, basil and oregano.  Heat to boiling.
  3. Add pasta. Cook until pasta is al dente about 8 minutes.  
  4. Add fish and heat through.

Baked Salmon

Aaron made this last night for dinner. He changed it of course. He used half olive oil and half butter (the real stuff). He also baked it a little less. The flavor was really good. It was great straight out of the oven, but as it sat it got really dry. Next time we'll have to stick with grilling or broiling.

Baked Salmon

  • 2 cloves garlic, minced
  • 6 tablespoons light olive oil
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh parsley, chopped
  • 2 (6 ounce) fillets salmon

  1. In a medium glass bowl, prepare marinade by mixing garlic, light olive oil, basil, salt, pepper, lemon juice and parsley. Place salmon fillets in a medium glass baking dish, and cover with the marinade. Marinate in the refrigerator about 1 hour, turning occasionally.
  2. Preheat oven to 375 degrees F (190 degrees C).
  3. Place fillets in aluminum foil, cover with marinade, and seal. Place sealed salmon in the glass dish, and bake 35 to 45 minutes, until easily flaked with a fork.

Baked Fish with Mushrooms

I found this on Mindy's recipe blog. It was so fast, easy and yummy. I used dried thyme.

Baked Fish with Mushrooms

1 lb fresh or frozen fish fillets, 1/2 - 3/4 inch thick
2 Tbsp butter
1 1/2 cups sliced fresh mushrooms
1/4 cup sliced green onions (2)
1 tsp snipped fresh tarragon or thyme
OR 1/4 tsp dried tarragon or thyme, crushed

1. Thaw fish, if frozen. Rinse fish; pat dry with paper towels. Cut into 4 serving-size pieces, if necessary. Arrange fish in a 2-quart rectangular baking dish, turning under thin edges. Sprinkle with salt.

2. In a small saucepan melt butter; add mushrooms . green onions, and dried tarragon, if using. Cook over medium heat until mushrooms and green onions are tender. Spoon mushroom mixture over fish; sprinkle with fresh tarragon, if using.

3. Bake, covered, in a 450 degree oven for 12 to 18 minutes or until fish flakes easily when tested with a fork.

Baked Salmon

This came from the back of the salmon package. Aaron fixed us a fabulous meal. He made this side dish (and added some dried onion flakes) and some veggies and salad. The meal was good. But the salmon seemed a little weighed down. I prefer the light flavor of fish. The bread crumb made it a little heavy. I think Aaron also substituted basil for the thyme.

4 Salmon fillets
1/2 tsp salt
1/4 tsp pepper
1/2 tsp paprika
1/2 tsp thyme
1 stick butter
1 cup cracker crumbs (we used bread crumbs)
1/2 c. diced onions


Preheat oven to 350 degrees F. Season the fish with salt, pepper, paprika and thyme. Cover with fine cracker crumbs. Place in 9x13 glass pan (we used an 8x8 pan) Put diced onions on crackered (or breaded) fish. Pour melted butter over fillets. Garnish with slices of lime (didn't have any so he sprinkled on some lime juice) Bake for 25-30 minutes until done. Do not over cook.

Cold Tuna Macaroni Salad

I made this tonight and the kids loved it. After a while they picked out the celery and tomatoes. I only used two stalks of celery and one tomato (it's all I had or I would have used more). Oh and I just chopped it. I didn't need to peel or seed it. I also used less mayo (but it was light). It needed some salt though and about 2 Tbsp. Italian dressing.

Cold Tuna Macaroni Salad

INGREDIENTS

  • 1 (12 ounce) package macaroni
  • 3 tomatoes - peeled, seeded and diced
  • 3 stalks celery, chopped
  • 1 (12 ounce) can tuna
  • 1 1/2 cups light mayonnaise
  • 1 tablespoon Italian-style salad dressing
  • 1 tablespoon white sugar
  • 1 pinch ground black pepper

DIRECTIONS

  1. In a large pot of salted boiling water, cook pasta until al dente, rinse under cold water and drain.
  2. In a large bowl, combine the pasta, tomatoes, celery and tuna.
  3. Prepare the dressing by whisking together the mayonnaise, salad dressing, sugar and pepper. Add to pasta salad, mix together, and refrigerate for 1 hour.

Broiled Tilapia Parmesan

This is one of the first recipes I used from Allrecipes.com. I believe it is their top rated recipe, with over 2000 reviews. You can see why, it is so easy, quick and delicious. I usually halve it to feed my family of four - but there are no leftovers. My kids love it and always ask for more! The only thing I change is I omit the onion powder, since I don't have any, and I use a little less mayo. Everything else is the same.

Broiled Tilapia Parmesan

INGREDIENTS
1/2 cup Parmesan cheese
1/4 cup butter, softened
3 tablespoons mayonnaise
2 tablespoons fresh lemon juice
1/4 teaspoon dried basil
1/4 teaspoon ground black pepper
1/8 teaspoon onion powder
1/8 teaspoon celery salt
2 pounds tilapia fillets

DIRECTIONS
Preheat your oven's broiler. Grease a broiling pan or line pan with aluminum foil.
In a small bowl, mix together the Parmesan cheese, butter, mayonnaise and lemon juice. Season with dried basil, pepper, onion powder and celery salt. Mix well and set aside.
Arrange fillets in a single layer on the prepared pan. Broil a few inches from the heat for 2 to 3 minutes. Flip the fillets over and broil for a couple more minutes. Remove the fillets from the oven and cover them with the Parmesan cheese mixture on the top side. Broil for 2 more minutes or until the topping is browned and fish flakes easily with a fork. Be careful not to over cook the fish.

We sometimes serve this with mashed potatoes and some other vegetable, but my thought the other night was that it would go well with a rice pilaf or orzo pasta. I didn't have any, but it would be great!

Fish Fillets Italiano

I made this last night.

Fish Fillets Italiano

INGREDIENTS
2 tablespoons olive oil
1 onion, thinly sliced
2 cloves garlic, minced
1 (14.5 ounce) can diced tomatoes
1/2 cup black olives, pitted and sliced
1 tablespoon chopped fresh parsley
1/2 cup chicken broth
1 pound cod fillets
DIRECTIONS
In a large frying pan, heat oil over medium heat. Saute onions and garlic in olive oil until softened.
Stir in tomatoes, olives, parsley, and wine. Simmer for 5 minutes.
Place fillets in sauce. Simmer for about 5 more minutes, or until fish turns white.

I found this on Allrecipes.com once again. I used tilapia (you can get it for $2/lb. sometimes) . I also added salt and pepper - about 1/4 tsp. each and 1 tsp. of Italian seasonings. Oh, and it called for white wine, but since I have so much of that on hand :) I substitute chicken broth and it works fine. We served it with green beans and buttered fettuccine.
